5 and 5e both include rules for this, 4th editions rules were, in my opinion, the best for generating the actual structure of a dungeon. Two dice are used in order to produce a bell curve, with the entries towards the middle of the table being the statistically more likely results.

I play D&D 5e, so I’ll often refer to that. However, without the information supplied to DMs, ie creature rarity, thats a bit hard for new DMs to do.
